Sweet and Sour Pork Encore

Ingredients
  Cornstarch 1 Tablespoon
  Brown sugar 2 Tablespoon
  Vinegar 2 Tablespoon
  Soy sauce 2 Tablespoon
  Pineapple juice 1⁄4 Cup (4 tbs)
  Beef broth 3⁄4 Cup (12 tbs)
  Pineapple tidbits 1 Cup (16 tbs)
  Green pepper 1 , seeded and cut into strips
  Onion 1 , cut in eighths
  Tomato 1 , cut into wedges
  Pork 2 Cup (32 tbs), cut into strips
Directions

In 2 quart (2 L) casserole, mix cornstarch and brown sugar.
Add vinegar, soy sauce, pineapple juice and beef broth and stir well.
Cook on HIGH 3-4 minutes until thickened, stirring each minute.
Stir in remaining ingredients and cook at 80% just until heated through.
Serve over rice.
