Smoked Pork Dinner
|Smoked boneless shoulder butt||2 1⁄2 Pound (1 Piece)|
|Prepared mustard||1 Tablespoon|
|Whole cloves||1 Teaspoon (Adjust Quantity As Needed)|
|Canned vacuum packed sweet potatoes||18 Ounce (1 Can)|
|Brown sugar||1⁄2 Cup (8 tbs)|
Place meat in deep kettle and cover with cold water.
Bring just to boiling; reduce heat and simmer (do not boil) about 1 hour per pound or till tender.
Lift from water.
Make 5 diagonal slashes 3/4 way through meat; spread cut surfaces with mustard; insert onion slice in each slash.
Spread top of meat with mustard and stud with cloves.
Arrange sweet potatoes around meat.
Sieve brown sugar over meat and potatoes.
Bake in moderate oven (350°) 30 minutes or till meat is glazed and potatoes are hot.
Carve pork in thin slices.
