Pork In Cider

Ingredients
  Boneless pork 1 Pound, cut into bite-size strips
  Shortening 1 Tablespoon
  Apple juice/Apple cider 2 Cup (32 tbs)
  Grated onion 1⁄4 Cup (4 tbs)
  Cornstarch 8 Teaspoon
  Brown sugar 2 Tablespoon
  Salt 1 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Cider vinegar 4 Tablespoon
  Apples 2 Medium, cored and coarsely chopped
  Hot cooked rice 2 Cup (32 tbs)
Directions

In a large saucepan or Dutch oven, brown pork strips in shortening.
Drain off fat; be sure browned bits are left in the pan for flavor.
Add 1 cup only of the cider and the onion.
Bring to boil.
Reduce heat; cover and simmer about 40 minutes or until meat is tender.
In a bowl, combine cornstarch, brown sugar, salt, and cinnamon.
Blend in remaining.apple cider and vinegar.
Add to pork, mixture along with apple.
Cook and stir until mixture is thickened and bubbly.
Cook and stir 2 minutes more.
Add salt and pepper to taste.
Serve over hot rice.
