Roast Guinea Hen Aux Garni

Ingredients
  Guinea hens 4 Pound
  Salt To Taste
  Lemon 1⁄2
  Onions 4 Small
  Salt pork 1⁄4 Pound, cut into thin strips
  Garlic croutons 2 Cup (32 tbs)
  Mushroom 12 Large, sauteed
  Cooked peas 1 Cup (16 tbs)
  Pimiento 1⁄2
Directions

GETTING READY
1. Preheat oven to 325°F.
2. Rinse and clean the hens; dry them and smear the interiors and exteriors with salt. Cut lemon can also be rubber, if preferred.

MAKING
3. Place 2 onions in the hens.
4. Take an uncovered roaster and with breast side down arrange the hens on the rack. Arrange pork strips on the back.
5. Roast for about 1 1/4hoours, turning halfway through, or till hens turn tender. Rearrange the pork strips after turning.

FINALIZING
6. Keep on a hot platter.
7. Garnish with mushroom caps stuffed with pimiento slivers and peas and Garlic Croutons.

SERVING
8. Serve hot.
