Pork Vegetable Bake
|Onions||2 , sliced|
|Green pepper||1 , seeded and cut into rings|
|Potato||1 , peeled and thinly sliced|
|Raw rice||1 Cup (16 tbs)|
|Canned tomatoes||29 Ounce (1 can, 3 3/4 cups)|
|Eggplant||1 Small, peeled and diced|
|Canned okra||1 Cup (16 tbs), drained|
Cube pork and brown in hot greased skillet.
Add onions and green pepper; saute for 5 minutes.
Grease a 3-quart casserole and line with potato.
Sprinkle with 1/2 cup of the rice and half of the tomatoes.
Add eggplant and pork mixture.
Sprinkle with remaining rice and the okra.
Add rest of tomatoes; season with salt and pepper.
Cover; bake in preheated moderate oven (375° F.) for 1 hour.
Uncover; bake for 15 minutes longer.
