Pork Vegetable Bake

Ingredients
  Pork 1 Pound
  Onions 2 , sliced
  Green pepper 1 , seeded and cut into rings
  Potato 1 , peeled and thinly sliced
  Raw rice 1 Cup (16 tbs)
  Canned tomatoes 29 Ounce (1 can, 3 3/4 cups)
  Eggplant 1 Small, peeled and diced
  Canned okra 1 Cup (16 tbs), drained
Directions

Cube pork and brown in hot greased skillet.
Add onions and green pepper; saute for 5 minutes.
Season.
Grease a 3-quart casserole and line with potato.
Sprinkle with 1/2 cup of the rice and half of the tomatoes.
Season.
Add eggplant and pork mixture.
Sprinkle with remaining rice and the okra.
Add rest of tomatoes; season with salt and pepper.
Cover; bake in preheated moderate oven (375° F.) for 1 hour.
Uncover; bake for 15 minutes longer.
