Roast Pork In A Blanket
|Lean pork loin joint||3 Pound (1.5 Kilogram)|
|Apple||1 , cored and grated|
|Fresh breadcrumbs||1 1⁄2 Ounce (40 Gram / 3/4 Cup)|
|Chopped hazelnuts||30 Milliliter (2 Tablespoon)|
|Dijon mustard||15 Milliliter (1 Tablespoon)|
|Snipped chives||15 Milliliter (1 Tablespoon)|
|Black pepper||To Taste|
1. Cut the skin from the pork leaving a thin layer of fat.
2. Preheat the oven to 220°C/425°F/ Gas 7. Place the meat on a rack in a roasting tin, cover with foil and roast for 1 hour, then reduce the oven temperature to 180°C/350°F/Gas 4.
3. Mix together the apple, breadcrumbs, nuts, mustard, chives and seasoning. Remove the foil and spread the breadcrumb mixture over the fat surface of the meat.
4. Cook the pork for 45-60 minutes, or until the meat juices run clear. Serve in slices with a rich gravy.
