Roast Shoulder Of Pork

Ingredients
  Fresh shoulder of pork 8 Pound
  Salt 1 Tablespoon
  Pepper 1⁄2 Tablespoon
  Flour 1⁄2 Cup (8 tbs)
Directions

1. Start oven, set at Moderate, 350° F.
2. Have this roast boned, which makes a pocket to be stuffed. For this use a Bread stuffing . Or cook the meat with the bone in it. In either case, wipe the pork with a clean, damp cloth. Mix the salt, pepper and flour and sprinkle all over the meat.
3. Place the meat, fat side up, in a roasting pan. Bake at the rate of 35 minutes per pound.
4. When done, pour off excess fat and make Brown Gravy.
