1. Start oven, set at Moderate, 350° F.
2. Ask the butcher to loosen the backbone from the ribs so that the carving will be easy when the roast is done. Wipe the pork with a clean, damp cloth. Sprinkle it with salt and pepper.
3. Place roast fat side up, rib ends down, in a roasting pan. Roast at the rate of 35 minutes per pound.
4. Drain off the excess fat and make a gravy with the drippings in the pan.
