Pork And Eggplant Bake
|Ground pork||1 Pound|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Marinara sauce||2 Cup (32 tbs)|
|Dried oregano||1 Teaspoon, crushed|
|Dried basil||1 Teaspoon, crushed|
|Eggplant||1 , peeled|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Shredded mozzarella cheese||4 Ounce (1 Cup)|
Cook pork, onion, and garlic till meat is browned.
Add next 3 ingredients.
Cook and stir 5 minutes.
Slice eggplant 1/4 inch thick.
Brush slices with oil and cook in skillet till golden on both sides.
Place half the egg-plant in bottom of a greased 12 x 7 1/2 x 2-inch baking dish.
Sprinkle with half'the Parmesan; cover with half the meat sauce.
Sprinkle with mozzarella.
Bake at 350° for 15 minutes.
