Baked Pork Chops's picture
  Butter/Olive oil 2 Tablespoon (30 Milliliter)
  Pork chops 6 (Loin / Rib, 3/4 Inch Thick)
  Sugar 1 Teaspoon (5 Milliliter)
  Onion 1 , finely chopped
  Green pepper 1 Small, diced
  Fresh mushrooms 250 Milliliter, sliced to make 1 cup
  Canned tomato sauce 8 Ounce (1 Can / 213 Milliliter)
  Thyme 1⁄4 Teaspoon (1 Milliliter)
  Crumbled bay leaves 1
  Mace 1 Pinch
  Salt To Taste
  Pepper To Taste

Preheat oven to 350°F (180°C).
In an iron frying pan, melt the butter or heat the olive oil.
Rub one side of each chop with a bit of the teaspoon of sugar.
Brown this side first.
Brown the chops in the hot fat over high heat.
Arrange the chops, as they are browned, in a shallow 10 x 6 x 2-inch (25 x 15 x 5-cm) casserole dish.
Salt and pepper to taste.
To the fat remaining in the pan, add the onion and green pepper, stir 3 to 4 minutes over medium heat.
Add the rest of the ingredients.
Taste for seasoning.
Bring to a boil and pour over the chops.
Cover the dish with a foil and bake one hour in the preheated oven.
Serve with rice or fine noodles.
