Ingredients
  Chitterlings 5 Pound, slit, fatty membrane removed, soaked and drained
  Water 4 Cup (64 tbs)
  Garlic 3 Clove (15 gm)
  Lemon 1 , halved
  Freshly ground black pepper 1 Teaspoon
  Whole cloves 2
  Dried thyme 1 Teaspoon
  Parsley sprigs 2
  Bay leaves 2
  Onions 2 , quartered
  Cider vinegar 1⁄4 Cup (4 tbs)
  Dried marjoram 1 Tablespoon
  Salt 1 Teaspoon
  Ground mace 1⁄4 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Tomato sauce 1 1⁄4 Cup (20 tbs)
  Cayenne pepper To Taste
Directions

Place the chitterlings in a large pot with water just to cover; add all the ingredients except the tomato sauce and cayenne pepper.
Simmer the mixture, covered, for three to four hours, or until tender.
The timing will vary, depending on whether fresh or partially cooked chitterlings are used.
During the last 30 minutes of cooking, add the tomato sauce to the pot and season with cayenne pepper to taste.
