Rolled Pork Roast with Sweet Potatoes
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Orange juice||3⁄4 Cup (12 tbs)|
|Pineapple preserves||1⁄4 Cup (4 tbs)|
|Frozen boneless pork loin roast||3 Pound, rolled|
|Canned sweet potatoes||23 Ounce, drained (1 Can)|
In 1-qt casserole mix brown sugar and cornstarch.
Stir in orange juice, pineapple preserves and salt.
Microwave at High 3 to 5 minutes, or until thickened, stirring after every minute.
Cover and set aside.
Unwrap frozen roast and place on roasting rack.
Cover with wax paper.
Microwave at 50% (Medium) 25 minutes.
Turn roast over.
Brush lightly with glaze; cover.
Microwave at 50% (Medium) 20 minutes.
Brush meat and potatoes lightly with glaze.
Microwave, uncovered, at 50% (Medium) 12 to 25 minutes, or until internal temperature reaches 165°F.
when checked in several places, rotating once during cooking.
Let stand, covered with foil, 10 minutes.
Brush with any remaining glaze.
