Easy Sweet And Sour Pork

Ingredients
  Pork tenderloin 6 Ounce, cut into 1/2 inch pieces
  Margarine/Butter 2 Teaspoon
  Canned pineapple chunks in syrup 8 1⁄4 Ounce, drained (Reserve 1/2 Cup Syrup, 1 Can)
  Cornstarch 2 Teaspoon
  Catsup 1⁄4 Cup (4 tbs)
  Sugar 2 Teaspoon
  Soy sauce 2 Teaspoon
  Red pepper sauce 1⁄8 Teaspoon
  Green pepper 1⁄2 Medium, cut into 1/8 inch thick strips
  Cherry tomatoes 6 , cut into halves
  Hot cooked rice 1 1⁄2 Cup (24 tbs)
Directions

Mix pork and margarine in 1-quart casserole.
Cover tightly and microwave on medium (50%), stirring every 2 minutes, until pork is no longer pink, 4 to 6 minutes.
Add enough water to reserved pineapple syrup to measure 1/2 cup; stir in cornstarch.
Stir syrup mixture, catsup, sugar, soy sauce and pepper sauce into pork mixture.
Cover tightly and microwave, stirring every 2 minutes, until mixture thickens and boils and pork is done, 6 to 8 minutes.
Cut pineapple chunks into halves.
Stir pineapple, green pepper and tomatoes into pork mixture.
Cover tightly and microwave until hot, 2 to 3 minutes.
