Loin Of Pork With Apricot Glaze

Ingredients
  Dried apricots 1 Cup (16 tbs), chopped
  Apricot nectar/Apple juice 1 Cup (16 tbs)
  Water 1⁄2 Cup (8 tbs)
  Honey 1 Tablespoon
  Lemon juice 1 1⁄2 Tablespoon
  Cinnamon 1⁄2 Teaspoon
  Cornstarch 1 Tablespoon
  Orange juice 1 Tablespoon
  Pork rib roast 6 Pound
  Pepper To Taste
Directions

In 4-cup glass measure, combine apricots, nectar, water, honey, lemon juice and cinnamon.
Heat at high3 to 4 minutes, or until mixture boils.
Blend cornstarch with orange juice.
Stir into glaze.
Heat at medium 5 minutes, or until glaze boils and is thickened.
Stir twice; reserve.
Season roast with pepper, place fat-side up on a microwave oven safe roasting rack set in oblong dish.
