Glazed Pork Shoulder
|Pork shoulder roast||5 Pound (Fresh, 1 Roast, 4 To 5 Pound)|
|Sweet potatoes||8 Medium|
|Canned crushed pineapple||8 3⁄4 Ounce, drained (1 Can)|
|Dark corn syrup/Light corn syrup||1⁄2 Cup (8 tbs)|
|Prepared mustard||2 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
Place meat on rack in shallow roasting pan.
Roast at 325° till meat thermometer registers 170°, about 3 to 3 3/4 hours.
Meanwhile, cook potatoes in boiling, salted water till tender; drain and cool.
Peel potatoes; halve lengthwise.
Combine remaining ingredients.
When meat thermometer reaches 170°, remove from oven; arrange potatoes around roast.
Spoon glaze over roast and potatoes.
Return to oven; roast 20 minutes more.
