1. Trim all fat from roast; rub roast with salt and pepper; place on a rack in a roasting pan. If using a meat thermometer, insert point into center of roast without touching bone.
2. Pour apple juice over; cover.
3. Roast in a moderate oven (350°) for 1 hour and 10 minutes; uncover. Lay apple slices on top of roast; brush with part of the steak sauce.
4. Continue roasting pork, brushing again with remaining sauce, for about 30 minutes, or until glazed and thermometer registers 170°. Remove to a heated serving platter; carve into chops.
