Crown Roast Of Pork

Ingredients
  Pork crown roast 8 Pound (1 Crown Roast Of Pork)
  Butter 2⁄3 Cup (10.67 tbs)
  Finely minced onion 1⁄2 Cup (8 tbs)
  Chopped celery 1 Cup (16 tbs)
  Bread crumbs 8 Cup (128 tbs)
  Sage/Thyme / marjoram 2 Teaspoon
  Poultry seasoning To Taste
  Canned sliced mushrooms 8 Ounce
  Crab apples 2
  Salt To Taste
  Pepper To Taste
Directions

Season roast to taste with salt and pepper.
Place in roasting pan, bone ends up; wrap bone ends in foil.
Bake, uncovered, in 325-degree oven for 2 hours and 20 minutes.
Melt butter in skillet; add onion.
Cook until transparent.
Stir in celery; heat through.
Turn into deep bowl; add all remaining ingredients, 2 tea spoons salt and 1 /2 teaspoon pepper.
Moisten with water, if necessary.
Place in center of crown.
Bake for 1 hour longer.
Replace foil wraps on bone end with crab appies to serve.
