Jicama And Pork

  Boneless pork 1 Pound
  Green pepper 1 Medium
  Cold water 1⁄2 Cup (8 tbs)
  Soy sauce 2 Tablespoon
  Dry sherry 2 Tablespoon
  Cornstarch 1 Tablespoon
  Cooking oil 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Grated ginger root 1 Teaspoon
  Peeled and diced raw jicama 1 Cup (16 tbs)
  Green onion 1 , sliced
  Salt 1⁄4 Teaspoon
  Chopped chinese cabbage 3 Cup (48 tbs)
  Hot cooked rice 1 Cup (16 tbs)

Partially freeze pork; thinly slice into bite-size strips.
Cut green pepper into thin strips.
Blend water, soy, and sherry into cornstarch; set aside.
Heat wok over high heat; add oil.
Stir-fry garlic and gingerroot 30 seconds.
Stir-fry pork, half at a time, 2 to 3 minutes or till browned; remove.
Return all meat to wok.
Add green pepper, jicama, onion, and salt; stir-fry 1 minute.
Add cabbage.
Stir soy mixture; stir into meat mixture.
Cook and stir till thickened and bubbly; cook and stir 2 minutes longer.
