Sweet Sour Pork Chops

Ingredients
  Pork rib chops 6 , cut about 3/4 inch thick
  Chicken broth 1 Cup (16 tbs)
  Firmly packed light brown sugar 1⁄2 Cup (8 tbs)
  White vinegar 1⁄2 Cup (8 tbs)
  Onion 1 Medium, thinly sliced
  Carrots 2 , diagonally sliced
  Green peppers 1 Medium, cit in thin wedges
  Red peppers 1 Medium, cit in thin wedges
  Seedless raisins 1⁄2 Cup (8 tbs)
  Cornstarch 3 Tablespoon
  Canned mandarin oranges 11 Ounce, drained and 1/2 cup syrup reserved (1 Can)
  Soy sauce 3 Tablespoon
  Hot cooked rice 1 Cup (16 tbs)
Directions

Brown chops on both sides in large skillet.
Season lightly with salt and pepper.
Add next 3 ingredients, cover and simmer 25 minutes.
Add vegetables and simmer 8 minutes, or until vegetables are done but still crisp.
Add raisins, cornstarch dissolved in reserved fruit syrup, and soy sauce.
Simmer, stirring, a few minutes, or until thickened and clear.
Add mandarin wedges and heat gently.
