Sweet Sour Pork Chops
|Pork rib chops||6 , cut about 3/4 inch thick|
|Chicken broth||1 Cup (16 tbs)|
|Firmly packed light brown sugar||1⁄2 Cup (8 tbs)|
|White vinegar||1⁄2 Cup (8 tbs)|
|Onion||1 Medium, thinly sliced|
|Carrots||2 , diagonally sliced|
|Green peppers||1 Medium, cit in thin wedges|
|Red peppers||1 Medium, cit in thin wedges|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Canned mandarin oranges||11 Ounce, drained and 1/2 cup syrup reserved (1 Can)|
|Soy sauce||3 Tablespoon|
|Hot cooked rice||1 Cup (16 tbs)|
Brown chops on both sides in large skillet.
Season lightly with salt and pepper.
Add next 3 ingredients, cover and simmer 25 minutes.
Add vegetables and simmer 8 minutes, or until vegetables are done but still crisp.
Add raisins, cornstarch dissolved in reserved fruit syrup, and soy sauce.
Simmer, stirring, a few minutes, or until thickened and clear.
Add mandarin wedges and heat gently.
