Roast Loin Of Pork With Figs
|For fig compote|
|Lemon slices||4 , chopped with rind|
|Sugar||1⁄2 Cup (8 tbs)|
|Fresh figs||1 Pound, washed and halved|
|Water||1 Cup (16 tbs)|
|White wine||6 Tablespoon|
|For roast pork|
|Pork loin||2 Pound|
|Olive oil||1 Tablespoon|
|White onions||12 Small, peeled|
|Shallots||6 , peeled|
Place all ingredients of fig compote in saucepan. Bring to boil over medium heat.
Reduce heat and continue cooking 20 minutes.
Preheat oven to 350 Â°F (180 Â°C).
Place pork loin in roasting pan. Brush meat with oil and season with salt and pepper. Add whole onions and shallots; sprinkle with paprika. Cook 30 minutes in oven.
Remove roasting pan from oven. Spread fig compote over meat. Return to oven and continue cooking 30 minutes.
