Spiced Pork Roast
|Onions||8 Medium, sliced or chopped|
|Loin pork||6 Pound|
|Garlic powder||To Taste|
|Prepared mustard||1⁄4 Cup (4 tbs)|
|Ketchup||3⁄4 Cup (12 tbs)|
Slowly fry onions in hot fat until yellow.
Spread evenly in the bottom of a shallow roast pan and place meat on top.
Sprinkle with salt, pepper and garlic powder.
Score the fat.
Mix mustard and ketchup together and spread thickly over the pork.
Roast at 325F for 3 to 3 1/2 hours, basting frequently.
Lift roast to a hot platter and keep warm.
Skim fat from the meat dripping and stir in 1/3 cup flour.
When all the flour disappears, slowly add 3 cups boiling water or vegetable water.
Cook and stir until gravy thickens.
Taste for seasoning and pour into a warm sauceboat.
Strain gravy if you wish.
