Sweet And Sour Pork

Ingredients
  Flour 1⁄4 Cup (4 tbs)
  Eggs 2
  Salt 1⁄2 Teaspoon
  Water/Milk 1 Cup (16 tbs)
  Lean pork 1 Pound, cubed
For salad oil
  Drained pineapple chunks 1 Cup (16 tbs), drained
  Carrots 3 , cut into strips
  Garlic 1 Clove (5 gm), chopped
  Sweet pickles 6 , sliced
  Water 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Cornstarch 4 Teaspoon
  Vinegar 2 Tablespoon
  Soy sauce 1 Tablespoon
  Pineapple juice/Water 1⁄2 Cup (8 tbs)
Directions

Beat flour, eggs and salt together.
Stir in just enough water to make a thin batter.
Dip pork into batter and drop into hot oil.
Deep fry about 10 minutes.
Lift out with a slotted spoon.
Drain on absorbent paper and transfer to a large skillet or electric frypan.
Add the next six ingredients.
Cover.
Bring to a boil and turn heat low.
Cook about 10 minutes.
Mix remaining ingredients to gether and blend into meat mixture.
Cook and stir for 5 or 6 minutes.
Taste for sweetness and seasoning.
Add a little more liquid if sauce seems too thick.
