Pork Roast With Cherry Sauce
1/2 cup cherry preserves
1/4 cup dark corn syrup
2 tablespoons vinegar
1/8 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
1. Place roast, fat-side-down on microwave roasting rack, in 2-quart (12 x 7) glass baking dish.
2. Microwave for 25 minutes on HIGH. Turn fat-side-up.
3. Microwave for 30 to 50 minutes on med.high (Roast), or until meat registers 165° F. Let stand, covered with foil, 10 minutes before serving. Slash pork roast between ribs; place on serving platter.
Pour hot Cherry Sauce over meat.
Cherry Sauce: Combine all sauce ingredients in 2-cup glass measure.
Microwave for 3 to 5 minutes on med.high (Roast), or until bubbly (about 150° F).
