Barbecued Baby Back Ribs
|White vinegar||2 Cup (32 tbs)|
|Apple cider vinegar||2 Cup (32 tbs)|
|Pork ribs||2 Pound, cut into 3 rib sections|
|Barbecue sauce||2 Cup (32 tbs) (homemade or top quality bottled)|
1. Bring the vinegars and water to a boil. Add the ribs. Liquid should just cover the ribs. Bring back to a boil, and then simmer gently, stirring occasionally and moving ribs from bottom to top, for about 10 minutes. Drain.
2. Fire up a charcoal or gas grill to very low flame, or heat oven to 350°. Brush top and bottom of ribs with a thin coat of barbecue sauce, and cook slowly and evenly, meat-side down in the oven, or on an upper rack on the grill for about 15 minutes. Turn over, brush again liberally with sauce (dab it on), and cook 20 to 25 minutes more, meat-side up. Brush on more sauce and cook another 20 to 25 minutes, until the ribs attain a dark, lacquered look and some black spots appear around the edges. Brush regularly with additional sauce, giving a final coat 5 minutes before taking them off the fire.
3. Cut apart the ribs with poultry shears and serve with cold beverages.
