Ingredients
  Pork leg/Fillet cut from leg 1 Small
  Salt To Taste
  Ground ginger 1 Teaspoon
  Oil 1 Tablespoon
Directions

Ask your butcher to score the pork rind well.
Place roast in well-oiled baking dish.
Rub skin with generous amount of salt and a little ground ginger.
Roast in hot oven, Mark 7,425°F., 20 minutes, then reduce heat to moderate, Mark 4, 350°F.; continue cooking until meat is well browned and tender, allowing 25 to 30 minutes per lb.
Cooking time. Make a thin gravy from the pan drippings;
