Pork Chops With Wine Sauce

  Pork loin chops 4 , cut 1/2 to 3/4 inch thick
  Freshly ground pepper 1⁄2 Teaspoon
  Olive oil 1⁄3 Cup (5.33 tbs)
  Garlic cloves 2 Large, minced
  Dry red wine 3⁄4 Cup (12 tbs)

Rub chops well with freshly ground pepper.
In a medium skillet, heat oil very hot; add chops and sear over high heat until brown, about 4 minutes on each side.
Pour off all but 3 tablespoons oil and add garlic.
Cover skillet, reduce heat, and cook chops until very tender, about 30 minutes, turning occasionally.
Remove chops to a serving platter and keep warm.
Add wine to pan, stirring to loosen drippings.
Bring to a boil and cook until sauce is reduced by half.
Pour sauce over chops and serve.
