Pork Chops With Orange Olive Relish

  Fresh orange juice 1 Cup (16 tbs) (about 2 1/2 oranges)
  Dry white wine 1⁄2 Cup (8 tbs)
  Lime juice 1⁄4 Cup (4 tbs) (about 2 limes)
  Ground cumin 1 Tablespoon
  Dijon mustard 1 Tablespoon
  Minced garlic 1 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Ground red pepper 1⁄8 Teaspoon
  Boneless center cut loin pork chops 24 Ounce, trimmed (6 chops, 4-ounce each, 1 1/2 inches thick)
  Cooking spray 1

1. Combine first 9 ingredients in a large zip-top plastic bag. Add pork to bag; seal. Marinate in refrigerator 8 hours, turning bag occasionally. Discard marinade.
2. Prepare grill.
3. Remove pork from bag.
4. Place pork on grill rack coated with cooking spray; cover and grill 10 minutes on each side or until pork is no longer pink.
