Pork Chops With Orange Olive Relish
|Fresh orange juice||1 Cup (16 tbs) (about 2 1/2 oranges)|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Lime juice||1⁄4 Cup (4 tbs) (about 2 limes)|
|Ground cumin||1 Tablespoon|
|Dijon mustard||1 Tablespoon|
|Minced garlic||1 1⁄2 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
|Ground red pepper||1⁄8 Teaspoon|
|Boneless center cut loin pork chops||24 Ounce, trimmed (6 chops, 4-ounce each, 1 1/2 inches thick)|
1. Combine first 9 ingredients in a large zip-top plastic bag. Add pork to bag; seal. Marinate in refrigerator 8 hours, turning bag occasionally. Discard marinade.
2. Prepare grill.
3. Remove pork from bag.
4. Place pork on grill rack coated with cooking spray; cover and grill 10 minutes on each side or until pork is no longer pink.
