Herbed Pork Loin Roast

Ingredients
  Chopped fresh sage 3 Tablespoon
  Chopped fresh parsley 2 Tablespoon
  Chopped fresh oregano 2 Tablespoon
  Minced fresh chives 1 1⁄2 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Boneless pork loin roast 1 1⁄2 Pound, trimmed (1 In Number)
  Olive oil 1⁄2 Teaspoon
  Cooking spray 1
Directions

1. Preheat oven to 375°.
2. Combine first 6 ingredients in a small bowl.
3. Rub pork roast with oil. Rub herb mixture over oil.
4. Place pork roast on a broiler pan coated with cooking spray. Insert meat thermometer into thickest part of roast. Bake at 375° for 1 hour and 5 minutes or until thermometer registers 160°. Let stand 10 minutes before slicing.
