Galantine Of Pork
|Pork belly/Null||1 1⁄2 Pound (Preferably Salted)|
|Stock/Water||1⁄2 Cup (8 tbs) (Null)|
|Salt/Null||To Taste (Null)|
|Pepper/Null||To Taste (Null)|
Season the inside of the meat well with salt and pepper and arrange thin slices of gherkin all over it.
Roll up tightly and secure with string, then secure tightly in a cloth.
Just cover with stock or water and vegetables and simmer gently for about 5 hr.When cooked, press between 2 dishes until cold, then remove the cloth.
The meat may be brushed with glaze and served garnished with parsley.
