Blackened Ribs

A spicy kick to spare ribs that'll have you screaming laize le bonton roulet
Ingredients
  Spare ribs rack 1 1⁄4 Pound
  Blackened seasoning To Taste
  Hot sauce 1 Tablespoon
Directions

Spread hot sauce over each side of the ribs
cover each side with blackened seasoning
and then coat each side with black pepper until you have developed a thick paste on each side
heat grill or smoker to about 400 degree's
while the smoker is still flaming
place the ribs on the grill
keep in mind this method of cooking will produce very thick smoke
cook on open flame for about 5 minutes each side
after cooking 5 minutes each side wrap in foil, choke out fire and maintain a flameless heat @ 300 to 400 degrees
cook for 1 hr 20 minutes
