Baked Honeyed Pork
|Grated ginger||2 Tablespoon|
|Ground ginger||2 Teaspoon|
Get the butcher to score the pork thoroughly.
Run knife between the skin and meat to form a pocket.
Using long-bladed knife, spread grated green ginger into pocket.
In basin mix oil, ground ginger and salt.
Place pork in baking dish, brush leg with oil and ginger mixture.
Bake in moderate oven, Mark 4, 350°F., allowing 30 minutes per lb.; brush occasionally with remaining oil and ginger mixture.
Fifteen minutes before the end of cooking time, brush leg completely with honey.
