Twice Cooked Pork Belly

Ingredients
  Pepper 1 Large
  Leeks/2 stalks scallions 1
  Ginger wedge 1⁄4
  Garlic 3 Clove (15 gm)
  Brown bean sauce 1 Tablespoon
  Monosodium glutamate 1⁄2 Teaspoon
  Water 1 Tablespoon
  Hoisin sauce 1 Teaspoon
  Pork belly strips 12 Ounce (1 Strip)
  Sauce 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Sherry 2 Teaspoon
  Szechuan hot oil 1 Teaspoon
  Sugar 1⁄2 Teaspoon
Directions

Step I: Bring enough water to a boil to cover strip of pork.
Place pork in pot and simmer or poach for 1 hour.
Remove and cool.
Cut against grain into slices 1 1/6 inch thick.
Step II: Using a high flame, heat pan and add oil, salt, garlic, ginger, and brown bean sauce.
Next add leek and stir for 30 seconds.
Add pork, sherry, sugar, and green pepper and stir for 1 minute.
Add hoisin solution.
Stir for 30 seconds or until whole dish is completely coated with it.
Place on serving dish and sprinkle Szechuan oil on top.
