Piquant Raspberry Pork Chops

Ingredients
  Pork center loin chops 4 (1 Inch)
  Salt To Taste
  Pepper 1
For marinade
  Raspberry jam 1⁄4 Cup (4 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Raspberry vinegar 2 Tablespoon
  Prepared english mustard 1 Teaspoon
  Cinnamon 2 Teaspoon
  Lemon juice 1 Teaspoon
  Ground ginger 1 Pinch
  Ground cloves 1 Pinch
Directions

The day before the barbecue, put raspberry jam in a small ovenproof bowl.
Add boiling water and stir until well blended.
Add the rest of the marinade ingredients and mix.
Place pork chops in a shallow glass or ceramic dish.
Pour marinade over chops, coating them well.
Cover with plastic wrap and refrigerate overnight, turning meat once.
Drain chops thoroughly, reserving marinade.
Place chops above medium-hot coals on a well-oiled grill.
Cook 8 to 10 minutes on each side, basting frequently with marinade.
