Spicy Pork Skewers With Onions And Peppers

Ingredients
  Reduced-sodium soy sauce 3 Tablespoon
  Lime juice 3 Tablespoon
  Packed light brown sugar 3 Tablespoon
  Chopped chipotle 2 Teaspoon
  Garlic 4 Clove (20 gm), finely chopped
  Boneless pork loin chops 1 Pound, trimmed and cut into 3 x 1/2-inch strips
  Sweet onions 2 , thickly sliced (Such As Vidalia)
  Bell peppers 3 , cut into four pieces and seeded (Assorted Color)
  Olive oil 2 Teaspoon
  Salt 1⁄4 Teaspoon
Directions

Combine the soy sauce, lime juice, and sugar in a medium bowl; stir until the sugar is dissolved.
Place 4 tablespoons of this mixture in a small bowl; stir in 1/2 teaspoon of the chipotle and set aside for a sauce.
Add the remaining 1 1/2 teaspoons chipotle and the garlic to the medium bowl, stirring until blended.
Add the pork and toss to coat; let stand for 15 minutes.
Spray the grill rack with non-stick spray; preheat the grill to medium-high or prepare a medium-hot fire.
Brush the onions and bell peppers with the oil and sprinkle with the salt.
Place on the grill rack and cook until browned and softened, about 4 minutes on each side.
Meanwhile, thread the pork strips on 8 metal skewers.
Grill, turning frequently, until lightly browned and just cooked through, about 4 minutes.
Slice the peppers into 1 -inch wide strips and halve the onion slices.
