Peachy Pork Picante
|Boneless pork loin||1 Pound, cut into 1 inch cubes|
|Taco seasoning mix||1 Tablespoon|
|Minced parsley||2 Tablespoon|
|Vegetable oil||2 Teaspoon|
|Bottled chunky salsa||8 Ounce|
|Peach preserves||1⁄4 Cup (4 tbs)|
Combine taco seasoning and parsley; coat pork cubes with seasoning mixture.
Heat oil in heavy skillet over medium-high heat.
Add pork, cook and stir to brown, about 3 to 5 minutes.
Add salsa and preserves to pan, reduce heat, cook and simmer until tender, about 15 minutes
