Ingredients
  Boneless pork loin 1 Pound, cut into 1 inch cubes
  Taco seasoning mix 1 Tablespoon
  Minced parsley 2 Tablespoon
  Vegetable oil 2 Teaspoon
  Bottled chunky salsa 8 Ounce
  Peach preserves 1⁄4 Cup (4 tbs)
Directions

Combine taco seasoning and parsley; coat pork cubes with seasoning mixture.
Heat oil in heavy skillet over medium-high heat.
Add pork, cook and stir to brown, about 3 to 5 minutes.
Add salsa and preserves to pan, reduce heat, cook and simmer until tender, about 15 minutes
