Red Simmered Pork Cubes

  Grated ginger root 1 Tablespoon
  Sugar 1 Teaspoon
  Garlic 2 Clove (10 gm), minced
  Cooking oil 2 Tablespoon
  Boneless pork 1 Pound, cut into 3/4 inch pieces
  Chopped onion 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  Soy sauce 2 Tablespoon
  Dry sherry 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Star anise/1/2 teaspoon aniseed 1
  Thinly sliced mushrooms/One 4 1/2-ounce jar sliced mushrooms 1 Cup (16 tbs)
  Thinly sliced bamboo shoots 1⁄2 Cup (8 tbs)

In skillet cook gingerroot, sugar, and garlic in hot oil for 30 seconds or till sugar and garlic turn light brown.
Add pork and onion; cook and stir till pork is browned on all sides.
Combine water, soy sauce, dry sherry, salt, and star anise or aniseed.
Pour mixture into skillet.
Simmer, covered, for 30 minutes.
Stir in the sliced mushrooms and bamboo shoots.
Simmer mixture, covered, about 15 minutes more
