Sassy Mojo Pork
|Pork tenderloins||1 Pound|
|Canned chipotle pepper in adobo sauce||4 , rinsed|
|Orange juice||1⁄2 Cup (8 tbs)|
|Coarsely chopped onion||1⁄4 Cup (4 tbs)|
|Snipped oregano/2 teaspoons dried oregano, crushed||2 Tablespoon (Fresh)|
|Lime juice||2 Tablespoon|
|Cooking oil||1 Tablespoon|
|Garlic||3 Clove (15 gm), minced|
Trim any fat from meat.
Place meat in a plastic bag set in a shallow dish.
For marinade, in a food processor bowl or blender container combine chipotle peppers, orange juice, onion, oregano, lime juice, honey, oil, salt, and garlic.
Cover and process or blend until nearly smooth.
Pour marinade over meat; seal bag.
Marinate in the refrigerator for 2 hours, turning bag occasionally.
Drain meat, discarding marinade.
In a grill with a cover arrange hot coals around a drip pan.
Test for medium-hot heat above the pan.
Place meat on the grill rack over drip pan.
Cover and grill for 40 to 50 minutes or until juices run clear (160Â°F).
If desired, garnish the meat with additional fresh oregano.
