Roasted Pork Tenderloin

  Pork tenderloin 3 Pound (There May Be One / Two Pieces If Purchased Packaged)
  Garlic 2 Clove (10 gm), chopped
  Dried thyme 1 Teaspoon
  Reduced sodium soy sauce 2 Tablespoon
  Worcestershire sauce 1 Teaspoon

In small bowl combine garlic and thyme.
Set aside.
Cut tiny slits into surface of pork tenderloin and insert small amounts of garlic mixture into each slit.
Place pork into a plastic storage bag.
Add soy sauce and Worcestershire sauce.
Close bag and refrigerate pork to marinate for at least an hour or overnight.
Heat oven to 400 degrees.
Remove pork from bag and place pork on roasting rack in roasting pan.
Discard leftover marinade.
Sprinkle pork with 1/2 teaspoon pepper.
Pour 1/2 inch hot water into pan.
Roast in oven 40 minutes or until internal temperature reaches 160 degrees.
Let rest 10 minutes before slicing.
Hint: Terrific served with cranberry apple chutney or baked apples and a side of sweet or mashed potatoes.
