Apple Stuffed Pork Chops

  Herb seasoned stuffing mix 1 Cup (16 tbs)
  Apple 2⁄3 Cup (10.67 tbs), diced
  Onion 1⁄4 Cup (4 tbs), finely chopped
  Raisins 3 Tablespoon
  Orange juice 1⁄3 Cup (5.33 tbs)
  Butter 2 Tablespoon, melted
  Grated orange rind 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄4 Teaspoon
  Allspice 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Center cut pork chops 32 Ounce (4 Pieces, 8 Ounce Each, 1 Inch Thick)
  Currant jelly 1⁄2 Cup (8 tbs)
  Orange juice 2 Tablespoon

In mixing bowl, combine stuffing mix, apple, onion, raisins, 1/3 cup orange juice, butter, orange rind, salt, cinnamon, allspice and pepper.
Cut a pocket in each pork chop.
Divide stuffing evenly among chops.
Arrange chops in 2-quart oblong glass baking dish with thickest meaty areas to outside edges.
In 1-cup glass measure, combine currant jelly and 2 tablespoons orange juice.
Microwave at high (10) 1 to 2 minutes; stir well.
Pour half of mixture over chops.
Cover with wax paper.
Microwave at medium (5) 30 to 40 minutes; carefully turn chops over after 15 minutes.
Spoon remaining jelly mixture over chops before serving.
