Glazed Pork Loin
|Loin of pork||4 Pound|
|Chopped celery||1⁄3 Cup (5.33 tbs)|
|Canned consomme||1 1⁄2 Ounce (1 Can)|
|Lemon juice||2 Tablespoon|
|Brown sugar||2 Tablespoon|
|Dry mustard||1⁄4 Teaspoon|
In roasting pan, roast meat fat side up at 325°F. for about 2 1/2 hours (35 to 40 minutes per pound or 170°F. on meat thermometer).
Meanwhile, in saucepan, cook celery in butter until tender; add remaining ingredients.
Cook over low heat, stirring until thickened.
During last 30 minutes of roasting time, brush roast frequently with sauce.
Heat remaining sauce.
