In a skillet, brown chops on both sides in the olive oil.
Add the broth and cover; simmer for 20 minutes.
Combine cornstarch, soy sauce, brown sugar replacement, and vinegar in a bowl; stir to blend.
Add to pan, stirring until thickened.
Add the green pepper, onion, and pineapple.
Cover and simmer for 5 to 10 minutes or until heated.
