|Pork rack||4 1⁄2 Pound (2 Kilogram)|
|Garlic||1 Clove (5 gm), thinly sliced|
|Vegetable oil||30 Milliliter (2 Tablespoon)|
|Onions||2 Medium, cut into wedges|
|Beer||125 Milliliter (1/2 Cup)|
|Potatoes||125 Milliliter, diced (1/2 Cup)|
|Carrots||125 Milliliter, diced (1/2 Cup)|
|Turnip||125 Milliliter, diced (1/2 Cup)|
|Beurre manie||15 Milliliter (1 Tablespoon, Kneaded Butter)|
– Make small cuts in the pork and insert garlic.
– In a skillet, heat oil and sear pork on all sides, then season with salt and pepper.
– Add onions and beer, cover and cook over low heat for about 45 minutes or until loin of pork is almost tender. If necessary, add liquid during cooking process.
– Add vegetables, cover and cook for 15 minutes or until meat and vegetables are done, then add kneaded butter to make a smooth sauce.
