Marinated Fillet Of Pork

Ingredients
  White wine 3⁄4 Cup (12 tbs)
  Vinegar 3⁄4 Cup (12 tbs)
  Thyme 1 Teaspoon
  Bay leaves 2
  Dried tarragon 1⁄2 Teaspoon
  Juniper berries 6 , crushed
  Pork fillet 2 Pound
  Oil 1 Tablespoon
  Carrots 2 Medium, peeled and sliced
  Onion 1 Medium, sliced
  Stalk celery 1 , sliced
  Sweet pepper 1 , cut into strips (Red /Green)
  Chopped parsley 1 Tablespoon
  Tomatoes 1 Pound, peeled, seeded and sliced
  Garlic 2 Clove (10 gm), crushed
  Salt 1 Teaspoon
  Ground black pepper To Taste
  Butter 2 Tablespoon
Directions

Combine marinade ingredients.
Add pork and marinate overnight.
Heat oil in a skillet and saute carrots, onion, celery, red pepper and parsley for 5 minutes.
Add tomatoes, garlic, salt and pepper and cook 2 minutes.
Strain and add marinade and simmer 20 minutes.
Meanwhile heat butter in a heavy casserole.
Dry pork well with paper towels and brown on all sides in hot butter.
Add vegetable mixture and bring to a simmer.
Cover and cook 45 minutes to 1 hour or until pork is tender.
