Zingy Pork Noisettes

Ingredients
  Pork noisettes 8 Ounce (4 Pieces, 2 Ounce Each)
  Flour 1⁄4 Cup (4 tbs)
  Salt 1 Pinch
  Pepper 1 Pinch
  Oil 2 Tablespoon
  Butter 2 Tablespoon
  Sugar 2 Tablespoon
  Lemon juice 3 Tablespoon
  Shallots 3 , chopped
  Chicken broth 1⁄4 Cup (4 tbs)
Directions

Place pork noisettes between 2 sheets of wax paper.
With a rolling pin, flatten meat.
Set aside.
On a plate, mix flour, salt and pepper.
Lightly dredge pork noisettes with seasoned flour.
In a skillet, heat oil and melt butter.
Lightly brown noisettes 2 minutes each side.
Remove from skillet.
Set aside.
Degrease skillet.
Mix in sugar and lemon juice.
Over moderate heat, caramelize 2-3 minutes, stirring constantly.
Fold in shallots and chicken broth.
Place noisettes in sauce.
Cook 2-3 minutes.
Transfer pork noisettes to individual plates.
Coat with lemon sauce.
