Dijon Breaded Pork Chops
|Saltine crackers||3⁄4 Cup (12 tbs), finley crushed|
|Ground thyme||1⁄2 Teaspoon|
|Ground sage||1⁄4 Teaspoon|
|Dijon mustard||1 Tablespoon|
|Pork chops||4 (1/2 Inch Thick)|
|Oil||1⁄4 Cup (4 tbs)|
Mix cracker crumbs, salt, thyme, pepper and sage in shallow dish or on sheet of waxed paper.
Blend egg and mustard in shallow dish.
Dip each chop in egg mixture, theft in cracker mixture to coat.
Heat Oil in large skillet.
Fry over moderate heat 16 to 20 minutes, or until pork is no longer pink, turning over once.
