Dijon Breaded Pork Chops

Dijon breaded pork chops is a herbed pork chops recipe. Skillet cooked, these breaded pork chops are coated with saltine cracker crumbs and flavored with sage and thyme along with mustard. Fried in oil, it can be served with fresh or baked vegetables.
Ingredients
  Saltine crackers 3⁄4 Cup (12 tbs), finley crushed
  Salt 1⁄2 Teaspoon
  Ground thyme 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Ground sage 1⁄4 Teaspoon
  Egg 1
  Dijon mustard 1 Tablespoon
  Pork chops 4 (1/2 Inch Thick)
  Oil 1⁄4 Cup (4 tbs)
Directions

Mix cracker crumbs, salt, thyme, pepper and sage in shallow dish or on sheet of waxed paper.
Set aside.
Blend egg and mustard in shallow dish.
Dip each chop in egg mixture, theft in cracker mixture to coat.
Heat Oil in large skillet.
Add chops.
Fry over moderate heat 16 to 20 minutes, or until pork is no longer pink, turning over once.
