Pork Stir Fry
|Frozen pea pods||6 Ounce, cooked (1 Package)|
|Frozen mixed vegetables||10 Ounce, cooked (1 Package, Chinese Mixed Vegetable)|
|Pork tenderloin||1 Pound, trimmed of fat and cut in 1-inch strips|
|Thinly sliced onion||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Ground ginger||1⁄2 Teaspoon|
1. Prepare vegetables. Set aside.
2. Put pork into an 8-inch square glass baking dish. Cover with plastic wrap. Cook in microwave oven 10 minutes at Medium-High; stir after 3 minutes and again after 6 minutes of cooking. Drain.
3. Add cooked pea pods, cooked Chinese vegetables and onion to meat; stir. Cook covered in microwave oven 3 minutes at High; stir once.
4. Combine cornstarch, water, soy sauce and ginger until smooth. Add to pork-vegetable mixture; stir. Cook covered in microwave oven 3 to 4 minutes at High, or until mixture thickens; stir once.
