Roast Loin Of Pork
|Pork loin roast||3 1⁄4 Pound (8 Ribs)|
|Onion salt||1 1⁄2 Teaspoon|
|Marjoram||1⁄2 Teaspoon, crushed|
1. Rub roast with a mixture of the salt, marjoram, and pepper. Secure roast on spit. Insert meat thermometer. Adjust spit about 8 inches above prepared coals, placing aluminum foil pan under pork to catch drippings. If using a gas-fired grill, adjust flame size following manufacturer's directions.
2. Roast until meat thermometer registers 170°F or until meat is tender. About 30 minutes before roast is done, score surface.
3. Place roast on a warm serving platter. Serve with sauce.
