Roast Pork Stuffed With Apricots

Ingredients
  Egg 1
  Butter 1 Ounce
  Chopped onion 1 Small
  Fresh parsley 1 Tablespoon
  Dry mustard 1 Teaspoon
  Dried apricots 4 Ounce
  Soft breadcrumbs 4 Ounce
  Salt To Taste
  Black pepper To Taste
Directions

Saute the onion in the butter.
Add the rest of the ingredients, and bind well with beaten egg.
Spread this mixture inside the meat's cavity, and tie the joint neatly.
Roast in a fairly hot oven, allowing a good 40 minutes to the pound, stuffed weight.
Baste frequently.
