Spicy Pork Tenderloin
|Prepared mustard||1⁄4 Cup (4 tbs)|
|Chili powder||1⁄4 Teaspoon|
|Pork tenderloin/4 to 6 loin chops, cut 1 inch thick||3 Pound|
Combine mustard, honey, salt, and chili powder.
Spoon over pork, cover, and refrigerate for 4 hours or until next day.
Lift meat from marinade and drain briefly (reserve marinade).
Place on lightly greased grill 4 to 6 inches above a solid bed of glowing coals.
Cook, turning and basting occasionally for 45 to 60 minutes for tenderloin (30 to 40 minutes for chops) or until meat is no longer pink in center when slashed.
