Sliced Belly Of Pork

Ingredients
  Pork belly 1 Pound (Use Salt Or Fresh Variety)
  Lemon rind 1
  Egg 1
  Crisped breadcrumbs 4 Ounce
  Dry mustard 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Get the butcher to remove rib bones and slice the meat into slices about 1/2 in. thick.
Beat the egg ready for dipping.
Mix breadcrumbs, grated lemon rind and mustard.
Dip each pork slice into beaten egg, coat with seasoned breadcrumb mixture, and put the slices into a greased shallow fireproof dish.
